Apple Peanut Butter Oatmeal Bars

A couple of weeks ago my mom came to me and said she had a bunch of almost rotten apples if I wanted to use them for anything. Obviously the answer was yes and obviously I had to figure out a recipe to use them in that wasn't just plain old boring apple pie or any of the more fall-ish apple recipes. I’ve been seeing baked oatmeal a lot and have been trying out new breakfast options to eat quickly in the morning since I am working 9-5, so I figured this would be the perfect time to try it myself!

This recipe came out SO much better than honestly even I expected. The bars are so versatile which I absolutely love. They can be dessert, a snack, or breakfast. It all depends on how you choose to eat it! So get on it and bake these bad boys. Tag me on Instagram @livinwith_laura if you try them!

Apple Peanut Butter Oatmeal Bars

Super easy & super delicious: the perfect breakfast, snack, or dessert :)


  • 2 cups rolled oats

  • 1 1/2 cups finely chopped apple (about 2 medium apples)

  • 1/4 cup peanut butter (my favorite is Smuckers natural)

  • 1/3 cup honey

  • 2 eggs

  • 2 tsp cinnamon

  • 1 tsp vanilla extract


  1. Preheat oven to 350 degrees.

  2. Mix together all of the ingredients in a large bowl.

  3. Transfer the batter to either a greased pan or a pan filled with parchment paper and use the back of a spoon (or your hands) to press it down evenly.

  4. Bake for 20 minutes.

  5. Wait till they are cool to cut and remove from the pan.

  6. Enjoy them for dessert with a scoop of vanilla ice cream, on the go as a bar, or for breakfast mashed with some milk and topped with fruit :)
