Quick & Easy Mediterranean Bowl
I’ll be honest, I started off this semester in an INSANE food slump. Cooking was boring me and I literally just was not in the mood for anything I was making. I scoured Instagram, Pinterest, and Google for recipes that were easy enough for a college student to make on a budget and in a short amount of time, but could find nothing that interested me. Finally after about a month into the semester and getting used to my new kitchen, I saw a picture on Pinterest of this delicious-looking bowl. There was no actual recipe so I definitely did not stick to the ingredients featured in the picture exactly, but this bowl came out so good regardless! I like basing my cooking off of recipes and pictures, but then adding my own twist.

Base of spinach
Chickpeas sauteed in paprika, garlic powder, and olive oil until slightly crispy
Eggplant slices roasted in garlic power, black pepper, and olive oil for 20 min at 400 degrees F
A big spoonful of hummus :)
