Peanut Butter Chocolate Chip Cookies
Hi everyone! Coming back to you this week FINALLY with another food post. I have not been cooking a lot lately, but I have been baking. The reason I haven’t really posted a lot about it though is because, one, I have had very little motivation to write anything recently, and two, none of my recipes have been original and/or modified at all. I don’t want to post a recipe that isn’t mine.
I do have to share this recipe with you guys though because it has quickly become my favorite cookie.
For the longest time I always said that I HATED the combination of peanut butter and chocolate. I have always (and still do) disliked Reese’s, probably because I don’t like milk chocolate (I don’t like the dark chocolate ones either though), but also because I hate the taste of “fake” peanut butter. Sorry Reese’s. Lately though I’ve been so obsessed with peanut butter…like really obsessed…like it’s all I want to eat. Ever since I made the switch over to the no salt, no sugar, just plain roasted peanuts, peanut butter a few years ago, I’ve been so into it. I also discovered that I do like the taste of chocolate and peanut butter together as long as it is not milk chocolate and (what I guess I would call it?) plain peanut butter. I also came across this chewy oatmeal chocolate chip cookie recipe by Kale Junkie in search of a somewhat healthified chocolate chip cookie recipe.
All things considered I have to give most of the credit to Kale Junkie for this recipe so definitely go check out the website and her Instagram! However, I did modify this recipe quite a bit because of allergies (my sister is allergic to tree nuts), preference, and pure laziness. I’m not sure how they taste using the original recipe, but I absolutely loved how they tasted with my modifications! 1 1/4 cups whole wheat flour
1/2 cup old fashioned rolled oats
1 cup peanut butter (or other nut butter if allergic to peanuts)
1/2 cup maple syrup
1 tsp baking soda
1/2 cup dark chocolate chunks (I chopped up a chocolate bar)
1/2 cup semi-sweet chocolate chips
In a medium size bowl, mix together the flour, baking soda, and oats. Then add the peanut butter, maple syrup, and egg. Once well combined, add the dark chocolate and semi-sweet chocolate.
The dough should be thick.
Using a cookie scoop or spoon, scoop dough and form cookies. Make sure you press them down as you like because they do not spread (don’t leave them in balls, otherwise you will get cookie balls lol). Depending on the size of your cookies, you will get 12-24.
Bake for 10-11 minutes. Remove from the oven and let the cookies settle before eating.
Make sure they are slightly undercooked so that they stay soft on the inside.
Try not to eat the entire tray at once :)
