Strawberry Chocolate Chip Blondies

Strawberry Chocolate Chip Blondies

I have been seeing so many people on Instagram and on different blogs baking strawberries into their chocolate desserts lately, so I decided to try it out myself! It’s crazy because when I think of baking with fruit, I either immediately think of banana bread (where you barely even taste the bananas) or blueberry muffins/scones/breakfast items. I never would’ve thought to make blondies with strawberries, but here I am! This is absolutely one of my favorite things that I have ever baked, so if you get the chance I HIGHLY recommend you try out this recipe.

They’re sweet from the chocolate and the strawberries so the only added sweetener in there is all natural honey. No refined sugar, no butter, and all delicious. You can modify with whatever flour you prefer with a 1:1 ratio, but DO NOT use coconut flour unless you plan on modifying the recipe completely! I also tried making cookies with the same recipe and they came out really yummy as well, just cook them for only 10ish minutes. Honestly, these came out tasting a little bit like strawberry chocolate chip pancakes…but I’m not complaining. Enjoy & tag me and let me know if you make them!

Strawberry Chocolate Chip Blondies

The perfect fruity & chocolately summer treat :)

  • 3/4 cup whole wheat or oat flour (both have worked for me, almond flour would probably work 1:1 too)

  • 1/2 cup honey or maple syrup (my two favorite natural sweeteners to use)

  • 1 cup rolled oats

  • 1/2 tsp baking soda

  • Sprinkle of salt

  • 1/3 cup melted coconut oil

  • 1 egg

  • 1 tsp vanilla

  • A generous handful of chocolate chips :)

  • 3 large strawberries chopped up (or as many as you want/think looks right)

  1. Preheat oven to 350 degrees.

  2. Mix together all of the dry ingredients in a large bowl.

  3. Add and mix in the melted coconut oil to the dry mixture.

  4. In a separate bowl, lightly beat the egg and vanilla together. Add that to the dry mixture.

  5. Make sure that everything is completely combined, then add in desired amount of chocolate chips and chopped strawberries to the bowl. Lightly stir to combine everything.

  6. Transfer the batter to either a greased pan or a pan filled with parchment paper.

  7. Bake for 22-28 min.

  8. Wait till they are cool to cut and remove from the pan.

  9. Enjoy & try not to eat them all in one sitting :)
