My FAVORITE Banana Bread
Finally, the day has come when I actually write out the recipe for my favorite banana bread. Banana bread is probably my favorite thing to bake…and maybe to eat too. It reminds me of when I was a kid and my mom would make banana bread in time for when I got home from school to eat as a snack or when she made it for us to have for breakfast. It’s nostalgic and delicious. Since then I’ve begun baking my own banana bread and have gone through a couple of different recipes, finally figuring out my absolute favorite. I love this recipe because you can totally customize it however you want: add chocolate chips, blueberries, or even just some extra cinnamon. Then you can eat it for breakfast, a snack, dessert, covered in peanut butter, more bananas, strawberries, blueberries, almond butter, whatever you want! My favorite thing is putting it on a bowl of yogurt in the morning with some fruit. Loaves of this don’t last long in my house!
THE BEST BANANA BREAD
2-3 mashed ripe bananas (depending on size—3 if small, 2 if large)
1/2 cup melted coconut oil
1/3 cup honey or maple syrup
1/4 cup milk or Greek yogurt
1 tsp vanilla extract
1 1/2 cups flour of choice (white, whole wheat, oat, almond—NOT coconut)
1 tsp cinnamon
1 tsp baking soda
sprinkle of salt
Any add ins—LOTS of chocolate chips (about 1/2 cup or more if you want), blueberries, extra cinnamon, nuts, other fruits—get creative with it!
Preheat oven to 350 degrees.
Mash the bananas in a bowl with a fork.
Add the eggs, melted coconut oil, honey/maple syrup, milk/Greek yogurt, and vanilla. Whisk together until completely combined.
In a separate bowl, combine the flour, cinnamon, baking soda, and salt together.
Pour the dry mixture into the wet and stir till combined.
Add any add ins.
Transfer the batter to either a greased loaf pan or a loaf pan filled with parchment paper.
Bake for 37-42 minutes.
Wait until it is cool to remove from the pan and cut.
