Salted Peanut Butter Oatmeal Blondies (GF, Vegan)
I kid you not, these are my new favorite dessert. I’m so over brownies at this point, they have nothing to give but chocolate (as much as I do love chocolate).
But blondies…blondies take the best things about a cookie and the best things about a brownie, smush them together, and voila! The magic that is the blondie happens right before your eyes (and 23 minutes in the oven @ 350). The truly magical thing about these blondies is that they’re not just your average chocolate chip concoction. They’re made with real whole ingredients, full of naturally sweet peanut butter, and sprinkled with salt to blend together the sweet and the salty flavors. Trust me, you’re going to want to make these. Your taste buds will thank me later.
Salted PB Oatmeal Blondies
A little sweet, a little salty, a whole lot of yum.
1/3 cup coconut sugar
1 cup Smuckers natural peanut butter (or any nut butter of your choice, I’m sure almond butter especially would be delicious)
tsp vanilla extract
1/2 cup milk (whole, skim, almond, soy, oat, etc.)
1 1/4 cups oat flour (just grind up some oats in your blender! My favorite is Quaker)
1 1/2 tsp baking powder
sprinkle of salt
1/2 cup chocolate chips
More salt to sprinkle on top (preferably larger kosher salt)
Preheat oven to 350 degrees.
Mix the coconut sugar, peanut butter, and vanilla together. Stir in the milk and mix until fully combined.
In a separate bowl, combine the oat flour, baking powder, and salt.
Add the dry mixture to the wet. Stir until completely combined and then mix in the chocolate chips.
Transfer the batter to either a greased pan or a pan filled with parchment paper and use the back of a spoon (or your hands) to press it down evenly.
Sprinkle more salt on top (about 2-3 pinches).
Bake for 22-25 min.
Wait till they are cool to cut and remove from the pan.
